I recently spoke with a friend of mine who eats at least 2 pounds of vegetables a day. She eats whole food, plant based foods. This diet is loosely based on "The China Study" book way of eating. She eats one pound of vegetables first as this helps her get the fiber she needs and helps her get full. To finish her breakfast she eats grain and fruit until she is full. For lunch she eats a bag of vegetables first (peppers, cucumbers, carrots, etc.) To round off her lunch she eats fruit, tortilla wrap, or something that is more what we think of as a "meal". For dinner she eats a pound of vegetables first. Then she has a main course, fruit, etc. She bases her intake of meals on how full she feels.
I have been eating 2 pounds of vegetables a day for 4 days. For 2 months before this I have been eating 20 ounces of vegetables a day. I believe my body had a reaction to the extra vegetables - a vaginal yeast infection. One night urinating was painful. I also had general vaginal discomfort. I woke in the morning and - no pain urinating! Since then I am not going to eat any form of sugar, including fruits for a few days to help the balance of yeast be restored.
