Your post made me think of a couple of things. 1.) It can take awhile (yes even longer than a month) for your body to adjust to these medications. They are potent and it can take a long time for the level in your body to adjust to the levels it needs to be.
2.) A large number of medications used to treat bipolar disorder have weight gain listed as a side effect. I'm not 100% sure, but I think seroquel is one as well. Its just the nature of the drugs.
Most doctors and therapists are going to tell you if you are bipolar, getting exercise is extremely important. It first of all helps improve your mood and second of all it helps combat the nasty side effects of our medications.
